Day 5 Chocolate Broccoli Spotlight: Mini Peach Crumble & Cream Trifle

For our fifth and final day of our Chocolate Broccoli spotlight, we decided to give you a dessert recipe. Enjoy, and congratulations Amber.

This ‘little’ recipe is special to my heart.  Of course it is more fun than normal simply because of the fact this is a Recipe Redux posting, but this special recipe is even MORE fun, we because I have announcement.

My sweet Fireman and me are expecting (Go ahead, jump up and down with glee and excitement.. I’ll wait.  In fact, I’ll do it with you.)

We are expecting not one precious little one, but there are two babies in my belly- and they are, in fact- the size of a PEACH.  Wow- they are getting quite big in that little space.

So when I heard of this month’s Redux challenge being that of a mini dessert- I couldn’t think of anything more fitting than that of a dessert of the peachy kind.  Plus- fruit is just about ALL I want to eat these days- that and Cheetos, but on a dietitian’s food blog, boasting that I am eating Cheetos everyday isn’t something I really want to do.

But, maybe that just goes to show you that us dietitian people are normal, and we like/eat bags (one serving at a time) of Cheetos (Puffs..), too.

For this recipe, I perused many different pudding recipes, some homemade and others from the boxed mixes- I think this is my personal favorite- for simply the ease of them.  Mix it with milk and in less than 2 minutes you have thick goodness in your bowl.

So, I took some help for this semi-homemade pudding layer- and I say semi because it took effort for me to add in real orange zest, sour cream, and the somewhat tedious act of folding in the whipped topping.  I get so bored with all the folding.

After some thought, I decided these little desserts weren’t mini enough for my taste.  So, thanks to my sweet SC’er, Ashley, she let me borrow some of her little children (thats what we lovingly call anything that she has related to serving, entertaining, or if its just a cute kitchen gadget, it is a child of hers!)

These were so, SO cute for displaying all my pretty layers- the thick pudding, the crunchy crumble, and the sweet peaches.

But, then I realized (after 5 minutes of fame with the camera) this extra-mini trifle is STUCK in that little dessert shot glass.  I have no SPOON that would fit.  Oops.  So, I scraped it out with my mini rubber scraper.

It worked.

{Recipe Redux} Mini Peach Crumble & Cream Trifle

Yield: 12

Serving Size: 1 mini dish (about 3/4 cup)

Ingredients
Pudding Mixture

        2 (3.4-ounce) packages vanilla instant pudding
        1 cup reduced fat sour cream
        1 1/2 cups skim milk
        1/2 teaspoon fresh orange zest
        1/2 cup powdered sugar
        2 cups lite whipped topping

Peach Mixture

        2 ½ cups finely chopped, peeled, very ripe peaches (about 4 medium)
        1 tablespoons brown sugar
        ¼ teaspoon cinnamon

Crumb Mixture

    1 cup graham cracker crumbs
    1/4 cup granulated sugar
    1/2 cup quick-cooking oats
    1 teaspoon cinnamon
    1/8 teaspoon nutmeg
    3 tablespoons melted butter

Instructions

Stir together all of crumb mixture ingredients and spread on cookie sheet and bake 350 until lightly golden, about 8 minutes. Remove from oven and let cool.

Combine peaches, brown sugar, and cinnamon, tossing well to combine; let stand at room temperature for at least 30 minutes.

In a large bowl whip milk, pudding and orange zest together until thick, fold in sour cream and once smooth fold in whipped topping.

In your single serving trifle dishes layer pudding, crumb mixture, peaches; repeating until dish is full, finishing with peaches. Sprinkle with crumb mixture. Repeat with remaining dishes.

Chill before serving.
