Creamy Chicken Florentine Soup (the healthy way)

We can't ever seem to get enough of what Scrumptious Pumpkin has to offer. Maybe it is her amazing photography, or even her bubbly personality, but we know for sure that she makes REALLY good food.  Here is one of her latest recipes, which she decided to make after an "unusual" snow storm on the East Coast.
